José António de Oliveira e Silvasofias
José Antonio Silva received his degree in Animal Science Engineering in 1992 from the Universidade de Trás-os-Montes e Alto Douro (UTAD). In 1994 he became Assistant at UTAD and in 1997 obtained his Master degree in Animal Production. In 2007 obtained his PhD in Food Science. Currently, he is Assistant Professor of the Veterinary Science Department (DCV) at UTAD and member of the Animal and Veterinary Research Centre (CECAV). He has participated in some projects in the past and is currently involved in two projects about quality of broilers meat and Arouquesa beef breed. The primary fields of research interest are related to meat quality, manly in autochthones breeds, In this subject are included studies on meat tenderness and the proteolytic processes, and food safety. He has co-authored 12 research papers and book chapters and 35 papers or abstracts in international or national meetings and supervised several MSc students.
